What is a Bamboo Noodle?
Bamboo noodles, also known as Bamboo Pressed noodles, or “Jook-Sing” noodles, are a Cantonese style of egg noodle made using a bamboo pole to beat the dough.
At Kwan Kee, we believe that the true essence of authentic Jook-Sing noodles goes beyond just taste; it’s about preserving a tradition and crafting a memory with every bite. Our noodles are not just a meal, but a dedication to quality. We’re committed to bringing you that perfect balance – springy, crisp, and tenacious – with a delicate, non-alkaline aftertaste that stays with you long after your meal. Every bowl of our classic "Wonton Noodle" is made with care and passion, ensuring that you experience the heart of authentic flavors, made fresh, and served with pride. At Kwan Kee, we’re not just making noodles; we’re honoring a time-honored craft, bowl by bowl.

Though considered a dying art, we at Kwan Kee are proud to keep this heritage alive, ensuring that each bowl we serve honors the time-honored techniques that make it truly special.
Inheriting the taste of intangible cultural heritage

Introduction
The owner Li Sai Leung founded Kwan Kee Bamboo Noodles since 2010, is a renowned Hong Kong eatery celebrated for authentic Cantonese cuisine, particularly its signature bamboo noodles.
In the heart of Cheung Sha Wan, he opened his first Bamboo Noodles restaurant, naming it "Kwan Kee" in honor of his wife. This thoughtful gesture laid the foundation for a legacy built on dedication, respect, and family values. Today, Kwan Kee stands as a respected name, known for its commitment to authenticity and quality in every bowl.

Authentic
The noodles are a key component of wonton noodles, one of Hong Kong's most iconic dishes. They have a refreshing, al dente texture.
Walking the streets, you'll often see 'wonton noodles,' a quintessential Cantonese dish. To be precise, it should be called 'wonton bamboo noodles.' But how many of the ones we eat are truly handmade?
Up to today, we still use the hardest way and most original methods to maintain the best to every generation onward.

Ingenuity
"Making bamboo noodles seems simple with just flour, eggs, and alkaline water. Anyone can mix these ingredients, but our secret recipe, which removes alkaline, ensures that the noodles maintain their elasticity and avoid any unpleasant aftertaste, resulting in a truly exceptional culinary experience, this is what the founder Li Sai Leung takes great pride in."
Making Jook-Sing noodles is hard work but the ingredients are easy, we never cut corners on every single detail of the originals.

Lagacy
Li Sai Leung's deep connection to wonton noodles stems from his childhood in Guangzhou. Growing up, he witnessed his grandfather's humble beginnings as a street vendor, selling handmade bamboo wonton noodles. This family heritage instilled in Li Sai Leung a profound appreciation for traditional culinary techniques. The process is labor intensive and is considered a dying art.
Maintaining a business is not an easy job, maintaining a traditional skill of culinary delicacy we spent more effort than anyone else.

Recognition
Kwan Kee's dedication to preserving traditional Cantonese cuisine has earned it widespread acclaim.
The restaurant's consistent recognition with Michelin's Bib Gourmand awards from 2012 onwards has solidified its reputation as a culinary gem. While this recognition brings increased attention, Li Sai Leung remains focused on continuous improvement, striving to maintain the highest standards of quality and authenticity.

Next generation
Kwan Kee's development has been passed on to the next generation to continue blending tradition with innovation, we are committed to "Inheriting the taste of intangible cultural heritage" while making quality, heritage-inspired foods more accessible and affordable for the next generation through franchising and direct sales.
